Instructions
- In a large pot, bring the water to a boil and add the chicken pieces. Cook until the chicken is tender, then remove and set aside.
- In a separate pan, sauté the garlic, shallots, turmeric, ginger, and coriander powder until fragrant.
- Add the sautéed spices to the chicken broth along with lemongrass, kaffir lime leaves, and bay leaves.
- Shred the chicken and return it to the pot. Simmer for another 10-15 minutes.
